Restaurant Manager; at one of Melbourne's most admired fine dining restaurants, Pure South Dining. We are searching for the right person to manage our flagship Dining Room including our Private Dining experience.

Desired skills, experience and behaviours - Key Criteria for our Restaurant Manager

  • Exceptional food and wine knowledge and desire to learn about our Tasmanian produce and suppliers
  • Calm and mature yet driven and dynamic professional demeanour in the workplace
  • Natural eye for detail and desire for consistency and standards
  • Proven track record and ability to meet controls and targets for labour, COGS and sales 
  • Ability to build relationships with a variety of internal and external stakeholders
  • Hospitality awareness to be able to contribute to social media, menu structure and evolving our offering
  • Modern leader able to outline a plan for how to select, train, lead and motivate their team

Pure South Restaurant is a customer-focused business that exercises humility in our hospitality: the customer is the focus. Pure South Dining is based on an unwavering and unique 'produce driven' ethos. The produce is exceptional, managed by relationships with farmers, fishermen and primary producers, all from Tasmania including Flinders Island and King Island.

  • the owner-operators are industry professionals and committed to the business 
  • the Front of House team is established, mature, experienced.

  • our Executive Chef David Hall has been Head Chef in a Michelin Star restaurant in the UK.
