Crofter recently opened in January 2020. The kitchen is led by Executive Chef Matt Wilkinson, the menu has a focus on vegetables, salads and features shared plates that reflect Wilkinson’s long-held passion for seasonal, sustainable produce, waste-free cooking, and showcasing local farmers.We strive to LISTEN, SHARE, LEARN and EVOLVE within this space as part of our commitment to a more sustainable food world creating delicious food. 

The role

Crofter Dining and Bar have an opportunity for an experienced Head Chef to join their kitchen team, this is a busy role that requires you to provide support and guidance to the BOH team. The kitchen is fast paced, you will ensure that our guests receive an amazing dining experience and strive to achieve excellence. 

Key responsibilities include
  • Work in conjunction with the Executive Chef to coordinate and oversee all sections of the kitchen and take the lead in the Executive Chef's absence
  • Ensure that food is produced to a high standard and be involved with the creative process of the menu including daily specials options 
  • Lead and provide support to the BOH team whilst running various sections during service 
  • Engage with FOH teams to ensure that guests receive an outstanding food experience 
  • Supervise the development and training of all BOH staff 
  • Support on ensuring financial viability and key performance metrics are being made in the kitchen whilst monitoring labour costs and food margins 
  • When required oversee and perform the operational duties of the kitchen and improve standards where necessary
  • Ensure that the kitchen remains compliant with all aspects of Food Safety Victoria, Food Safety Plan and adhere to OH&S practices and policies
  • Assist with improving efficiency across BOH operations, reducing costs and improving standards without compromising quality 
What you need 
  • Four years post apprenticeship experience 
  • Strong attention to detail and communication skills
  • Proven ability to improve processes and operations within the kitchen
  • Ability to work in a high pressure and fast paced environment
  • Be self motivated and have a hands on management approach to support and give direction to the BOH team
  • Understand the workings of a high standard kitchen with uncompromising quality requirements
  • Ability to work closely with FOH teams 
  • Strong written and verbal proficiency
