Qualified Chef 

For Pig Mary Pty Ltd t/a Ester Restaurant

You will hold as a minimum:

  • Certificate III in commercial cookery including at least 2 years of on the job training, 
  • A current Food Safety Supervisor qualification from an accredited Australian provider,
  • A minimum of 2 years experience in hatted, high-end restaurants is a must

As a qualified chef you will be responsible for all aspects of prepping a section and executing service in that section. You will be responsible for liaising with the head and executive chef on the creation of new dishes and the execution of those dishes according to the recipes specified. 

You will be responsible for all aspects of running your section properly in a fast-paced, stressful environment. You will be part of a tight-knit team and will excel at providing exceptional attention to detail. You will be expected to provide leadership and some training to more junior members of the team and to lead by example at all times.

 As a chef at Ester your responsibilities will include, but not be limited to:

  • Checking the quality of all incoming foodstuffs and liaising with suppliers to rectify any issues.
  • Excellent proficiency at using a range of commercial and specialised kitchen equipment 
  • Cover all aspects of prepping a section and executing service in that section to the high standards of the executive chef
  • assist in planning menus, estimating food requirements and ordering correctly
  • may provide training to other more junior kitchen staff and apprentices.

Besides the above essential skills and qualifications, and due to the unique nature of the restaurant and requirements of the role, our ideal candidate will also demonstrate proficiency in and have experience with the following: cooking with a wood fired oven, fermenting of vinegars and kombucha, preparing and baking sourdough breads.
