We are looking for someone who has had a minimum of 3 years in a Bistro environment. Able to turn out quality food at high volume and fast pace. You will be responsible for the kitchen, including stock ordering, stock rotation, waste control, PAR levels, KPIs, and mentoring the junior kitchen staff
The Bistro is located at the Ocean Grove Surf Life Saving Club and we are working along side the club to develop the dining area for the members and their guests. With one of the best views in Ocean Grove, the Bistro seats around 80 covers with a couple of sittings per night. The Head Chef needs to be able to co-ordintate large tables and get the food out in a timely manner whilst still maintaing the quality and reputation that The Driftwood has. Currently the Bsitro is open Wednesday through to Saturday nights, and breakfast & afternoons on Sunday.
We need someone who has had a similar position before is about to cope with the high volume & fast pace, whilst instructing & mentoring the junior staff. Someone who can take full responsbility for the kitchen, including ordering, stock rotation, waste control, PAR levels and hitting KPI's.
There is also the opportunity to work with the Events Manager of the Surf Club to develop corporate events and function packages.
