About the Role

Due to the opening of the new state of the art Lakeside Visitor Centre, Emerald, Puffing Billy Railway have an amazing new opportunity for a talented and highly skilled Head Chef to join our team on a permanent full-time basis.  Mostly day work with weekend work required.

Reporting to the Commercial Manager and directly responsible for a small kitchen team, you will be providing culinary support and direction for hospitality operations across Puffing Billy Railway, including the Lakeside Visitor Centre, catered trains, special events and promotions, functions and relevant food and beverage outlets.

A stunning state of the art commercial kitchen will provide you with all the inspiration you’ll need to create new and innovative ‘Instagram worthy’ menus with an emphasis on local produce, that will delight our many visitors.

Some of your day-to-day responsibilities will include (but not be limited to):

  • Lead, motivating and coaching the Puffing Billy Railway kitchen and hospitality team
  • Provide direction and leadership across all kitchen based culinary standards and ensuring high levels of safety and professionalism
  • Provide menu and product development innovation including the identification of new and reviewing existing suppliers
  • Be accountable for the provision of consistent service and product quality across all Puffing Billy Railway hospitality outlets
  • Manage the cost of goods, labour and expense targets within agreed parameters as required
  • Sleeves up, apron on and in the kitchen preparing memorable food for Puffing Billy Railway visitors!

About You

To be considered for this position you must have experience in a similar role along with relevant kitchen qualifications.  You will have extensive experience providing leadership in previous kitchen teams, and in the management of high-volume food preparation and delivery in an often-changing, dynamic environment.

You will be able to work cooperatively and respectfully with individuals from diverse backgrounds and cultures, and have the strong interpersonal skills required to build effective relationships with both internal and external stakeholders.

Your strong understanding of food and beverage industry trends in service, product and presentation will be evident in your demonstrated abilities to design, implement and evaluate food and beverage promotions in a variety of environments.

This new role would suit a person who enjoys a challenge and has the initiative and passion to drive the creation of a must visit culinary destination in the Dandenong Ranges.  This is a unique opportunity to place your stamp on new and improved food and beverage offerings for visitors to Puffing Billy Railway services and activities.
