Rocco's Bologna Discoteca is looking for a Sous Chef to work closely with Head Chef Josh Fry to open and run our new Restaurant for a November open. Be a part of a team that has fun while slinging the Original Meatball Sub & making Salumi. The Congrats Food Group is expanding and we want you to join us.

The menu features much more than just the best sub in town and our beverage offering will excite staff and guests alike.

Our menu will consist of our famous sandwiches, house made salumi, fresh foccacias, and extensive Antipasti.

The Ideal Candidate Must Have:

  • Demonstrated experience as a Sous Chef 
  • Display exemplary leadership and passion for global cuisine trends
  • Effective management and communication of diverse team
  • Experience in managing and maintaining food safety program including documentation
  • Rostering and ordering experience
  • Monitor and supervise OH&S standards and procedure
  • Ability to build and maintain effective relationships
  • Genuine interest in the day to day operations
  • Understanding of financial budgets, food and labour costs
  • Excellent attention to detail
  • Outstanding time management during preparation and service periods
  • Full availability, able and willing to work weekends, public holidays, opening and closing shifts
  • Qualification in Commercial Cookery or equivalent
