Established in 1993, bills has four restaurants in Sydney and 15 more in London, Seoul and across Japan.

This is a special opportunity to work with a unique business, continuing to build on Bill Granger’s trailblazing legacy. The job is based in our Sydney head office in Darlinghurst.

ABOUT YOU

We are looking for a true restaurateur, with deep experience of our industry, proficient in all aspects of the business – who feels a strong sense of ownership of the restaurants they are a part of.

You have exemplary leadership skills and is someone who will inspire, motivate and nurture our teams.

A standards-led professional, with a keen eye for detail, who is able to focus simultaneously on macro and micro levels, placing equal importance on customer experience and business success.

You will have strong knowledge of our industry in Sydney and Australia and a passion for all things hospitality.

A deep understanding and appreciation of Bill Granger’s legacy and approach to food and restaurants is essential.

You will be working with a highly engaged and motivated long-term team – and we want someone who will see themselves working for bills on that basis. This is not a stepping stone role – it’s a destination.

THE ROLE

The heart of the job is to run and lead our four restaurants in Sydney.

It’s a multi-faceted role, requiring a self-starting candidate who confidently excels n several distinct areas, while being able to balance the demands of each one. All aspects of the job are equally important in delivering our industry-leading standards that maintain our reputation as a world-class restaurant business.

  • Customer experience – making people feel good is at the heart and soul of bills and the General Manager must understand and value all the diverse elements that create this, from the warm hello to the beautiful food and light-filled spaces.
  • Financial – they must be sales-driven and fluent in all elements of a restaurant business that impact the P&L. Someone who understands the importance and benefits of embracing new technologies, efficient systems and robust processes.
  • Team leadership and people skills – motivating and inspiring our teams, mentoring them to develop their potential and deliver the best experience to our customers.
  • Culture – deeply understand the diverse elements that make bills, bills. Our food, coffee, art, design and beautiful environments create our world-renowned reputation, together with an unwavering focus on consistently high standards,

  • Sustainability – the General Manager will have practical experience and deep understanding of sustainability goals in a restaurant context, as part of our core drive to lessen the environmental impact of our business. As well as managing the restaurant teams, the General Manager will work with the business owner and global leaders across the UK, Japan and South Korea, to maintain a consistent standard and stay true to the bills ethos.
