Established in 1993, bills has four restaurants in Sydney and 15 more in London, Seoul and across Japan.
This is a special opportunity to work with a unique business, continuing to build on Bill Granger’s trailblazing legacy. The job is based in our Sydney head office in Darlinghurst.

We are looking for a true restaurateur, with deep experience of our industry, proficient in all aspects of the business – who feels a strong sense of ownership of the restaurants they are a part of.
You have exemplary leadership skills and is someone who will inspire, motivate and nurture our teams.
A standards-led professional, with a keen eye for detail, who is able to focus simultaneously on macro and micro levels, placing equal importance on customer experience and business success.
You will have strong knowledge of our industry in Sydney and Australia and a passion for all things hospitality.
A deep understanding and appreciation of Bill Granger’s legacy and approach to food and restaurants is essential.
You will be working with a highly engaged and motivated long-term team – and we want someone who will see themselves working for bills on that basis. This is not a stepping stone role – it’s a destination.
The heart of the job is to run and lead our four restaurants in Sydney.
It’s a multi-faceted role, requiring a self-starting candidate who confidently excels n several distinct areas, while being able to balance the demands of each one. All aspects of the job are equally important in delivering our industry-leading standards that maintain our reputation as a world-class restaurant business.
