Stallion is Mansfield’s modern Euro-Italian dining room — woodfire, some pasta .. a litle left field of your run of the mill euro restaurant, excellent wine & cocktails, late-night energy, and a standard that punches well above regional expectations.
We’re building a serious kitchen team for our 2025-26 direction and are hiring across all senior levels.
Sadly we are saying goodbye to a few of our key kitchen members who have been with us for over 2-3 years, who are pursuing a lifestyle change. It just happened to be almost all at a similar time... Aww Shucks!!
OPEN ROLES
HEAD CHEF — Full-Time
Lead Stallion’s kitchen with creativity and discipline.
This is a “run the whole show” position — not a token title.
You will:
• Oversee all kitchen operations Wednesday–Saturday
• Lead menu development: modern Euro-Italian, fire-driven, seasonal, creative!
• Manage ordering, costing, prep systems & compliance
• Train and mentor a growth-focused team
• Drive consistency, speed, organisation and high-quality execution
You are:
• Strong in leading a team through example
• Experienced in modern Italian or contemporary European dining
• A leader who’s calm, clean, fair, and standards-obsessed
• Ambitious — we’re building something real here
SOUS CHEF — Full-Time
The operational backbone.
Perfect for someone stepping up or wanting responsibility with support.
You will:
• Run service when required (pass confidence essential)
• Drive prep, systems and mise excellence across sections
• Maintain consistency, pacing and organisation
• Support menu development and staff training
CHEF DE PARTIE — Full-Time
For chefs who want to grow quickly in a disciplined but creative kitchen.
You will:
• Run a section confidently (pasta, grill, crudo or larder)
• Work with premium produce, woodfire, house ferments/oils, etc.
• Learn refined Euro-Italian techniques at a high level
• Contribute to an evolving, seasonal menu

Stallion is a modern Euro-Italian dining room in the heart of Mansfield. We focus on woodfire cooking, refined pasta and European technique, great wine & cocktail program, tight service, and late-night atmosphere. Think inner-city energy, executed in the High Country.
Located in Mansfield (regional north east victoria), with Mt. Buller nearby we are fortunate to experience two busy seasons. Winter brings the snow obsessed, and summer is our busiest time with camping, nearby lake activities, down hill mountain biking to name a few things that the crowds flock to our town for.
