Cà Phê Mai is a new contemporary Vietnamese all-day canteen and evening wine bar opening in Double Bay (The Forum, Kiaora Lane frontage). We trade as a café and lunch room seven days a week, then pivot to a small-plates and natural wine venue Wednesday through Saturday nights.
We are hiring casual floor staff and a casual bartender to open and run the venue with us.
The venue
The food is Cindy's family. Three decades of Vietnamese cooking in Sydney, served fresh and fast through the day. Bánh mì, fresh rolls, smoky skewers, pho, crispy chicken. Small plates and the Fillet o' Cha Ca Burger after dark.
Coffee is specialty, no shortcuts.
Wine is a tight natural-leaning list, built around Vietnamese food.
Service is warm and on it. We notice the empty glass before you ask. We are not stiff. We are also not casual to the point of sloppy.
The roles
Bartender (casual) Wednesday to Saturday dinner. Comfortable on espresso for occasional day cover, but the brief is the bar: cocktails, beer, and the wine programme.
The cocktail list is Vietnamese ingredients (jasmine, kumquat, pandan, pho spice, tamarind, nuoc cham) on classic formats. Low-ABV, fruit-forward, herbal. Designed to sit alongside the natural wine list, not compete with it. You will help shape and pour both lists alongside the founders.
If natural wine is something you actively follow and ingredient-led cocktails are your idea of a good bar programme, this role is built for you.
What we are looking for
Real hospitality experience. Cafés, wine bars, restaurants. We are not fussed about the badge, we care about the standard.
Warmth that is genuine.
An interest in food and wine beyond the shift. You do not need to be a wine head, but you should want to learn.
People who treat every shift like it matters.
RSA and full working rights in Australia.
What we offer
$35 to $40 per hour, depending on role and experience. Well above award.
A small team. No 18-person rosters where no one knows your name.
Real training. Coffee, wine, and service taught properly. Strong people get more responsibility and more shifts.
Staff meals on shift, coffee on us, and a glass at the end of service if you want one.
