Careful and meticulous restoration has transformed the landmark heritage site at 23 Bourke Street into a four-level haven of immersive, French-accented dining and celebratory experiences; including a showpiece restaurant spanning the lower two floors, a late-night supper club in the basement and an elegant rooftop terrace.

About the Opportunity:
Reporting to the Executive Chef, you will be responsible for overseeing the day-to-day operations of the kitchen, assist with menu development and management of cost for your area. You will lead, motivate and supervise the team while ensuring quality and consistency. You must be energetic and enthusiastic with a real passion for your craft.

The Ideal Candidate: 
  • Demonstrated experience as either a Head Chef or Sous Chef in a premium restaurant
  • Track record of leading teams that deliver outcomes
  • Ability to manage staff performance, including unsatisfactory performance
  • Display exemplary leadership and passion for global cuisine trends
  • Understanding of financial budgets, food and labour costs
  • Experience in managing and maintaining food safety program including documentation
  • Rostering and ordering experience
  • Monitor and supervise OH&S standards and procedure
  • Ability to build and maintain effective relationships
  • Outstanding time management
  • Calm and composed demeanour
  • Qualification in Commercial Cookery or equivalent
