Chef – Pacho Taqueria (Prahran Market)

Pacho is a small independent taqueria inside Prahran Market. We do authentic Mexican street food with tight batch systems, clean execution, and a calm kitchen culture.

We’re hiring a professional chef who’s mature, switched on, and proud of consistency.

The role (hands-on, real ownership)

You’ll run prep and service in a compact kitchen with clear systems.

You will:

  • Lead daily mise en place and service (meats, salsas, rice/beans, guac, tortillas, garnishes)

  • Execute batch recipes with portion + flavour consistency as the non-negotiable

  • Keep the kitchen organised, clean, and food-safe (always)

  • Use prep lists, par sheets, labelling, stock rotation — and improve them

  • Communicate directly with the owner + FOH to keep service smooth and calm

  • Help train and lift the rest of the kitchen team

Shifts: Mostly daytime / early evenings due to market trading, plus weekends and key service days.

What we’re looking for

You’re the kind of chef who:

  • Has solid experience in busy kitchens (CDP / Sous level ideal)

  • Works clean, fast, and calm — no ego, no drama

  • Cares about prep discipline and systems (not vibes)

  • Communicates clearly and respects teammates

  • Loves simple food done seriously well

  • Is curious about Mexican food (experience is a bonus, not required)

If your mentality is: “I own the standard every day” — you’ll fit.
