GENERAL MANAGER

Melbourne, VIC  ·  Full-Time

Two venues. One brief.

We are looking for two General Managers on behalf of two of Melbourne’s most respected independent hospitality businesses.

One is a specialty coffee roastery and café with a direct-trade sourcing arm that reaches producers in Colombia, Guatemala, and Ethiopia. The other is a brewery and venue with a loyal community, a reputation for genuine hospitality, and a product that speaks for itself.

They are different businesses, different worlds — but both are built around craft, purpose, and the kind of culture people are proud to be part of. They are at the point where the right operator can walk in, take ownership, and leave a real mark. These roles carry real authority and real accountability.

What you’ll own

  • Full operational leadership across all sites and departments
  • Team management: hiring, onboarding, performance, and development
  • Financial accountability: P&L ownership, weekly reporting, and forecasting
  • Wholesale or trade relationships: retention, growth, and new business
  • Guest or customer experience at the highest standard
  • Building the systems and rhythms the business needs to scale without losing what makes it exceptional

Who we’re looking for

You have operated at a senior level in coffee, hospitality, or food and beverage. You understand the culture of businesses built around craft — and you know the difference between a job and a vocation.

You are a clear communicator, a natural organiser, and someone who earns trust through consistency. You can hold both the strategic view and the operational detail. You follow through.

Specifically:

  • Proven senior management experience in hospitality, coffee, or F&B
  • A track record of building teams and operational systems in a growing business
  • Commercial literacy: comfortable with P&L, forecasting, and data-driven decisions
  • High emotional intelligence and the ability to build a close working relationship with a founder
  • Venue or project launch experience is a plus

Why this roles

These are not generic GM positions. Both businesses have earned genuine respect in their fields. The people behind them are looking for an operator who brings the same level of craft to running a business as they bring to their product — and who is ready to shape what comes next

To Apply

Send your CV and a short cover note to sean@pax.melbourne. Tell us which world resonates — coffee or beer, or both — who you are, what you’ve built, and why this kind of role appeals to you. We’ll send through the full brief for the role that fits.
