The Pinnacle is a proper Melbourne pub — seven days, big Sundays, a public bar that fills on trivia nights and a dining room that doesn't let the standard slip. Taps, parmas, regulars who've been coming for years, and a team that takes it seriously without taking itself seriously.
We're looking for a Bar Manager to take full ownership of the bar and the beverage program.
The bar is yours end to end — the list, the cellar, the stock, the margin, and the standards behind the taps. But this isn't a role that lives behind the bar. You'll be on the floor through service leading the wider FOH team alongside our GM, and you'll have a hand in how the whole room runs.
The beverage program: tap rotation and keg management, wine and spirits ordering to par, supplier relationships, cellar organisation and line cleaning schedules, stocktake cycles and variance
The numbers: holding beverage GP to target, managing wastage, keeping POS product and pricing data accurate, flagging margin movement early with a fix attached
Bar standards: speed and consistency through peak trade, setup and close, specs and pour standards, glassware and equipment, the bar looking and running the way it should at 9pm on a Saturday
Floor leadership: running service alongside the GM, holding the room on busy nights, allocating the floor, and sorting problems before guests notice them
Training and development: building product knowledge across the whole FOH team, guiding trial shifts and new starters through their first weeks, and developing the supervisors coming up behind you
Close and cash-up: running end-of-night procedures, cash handling and reconciliation, and end-of-day reporting
You know a pub is a business, not just a service point. You can order, count, cost and pour, and you know which of those actually moves the number. You're calm at peak, you set a standard and hold it, and you're as comfortable reading the room as you are reading a stocktake.
Specifically, we're looking for:
Two or more years running a bar, or in a senior FOH leadership role in a busy venue
Genuine beverage depth — beer, wine and spirits, with real confidence on stock, margin and product
Experience owning ordering and stocktake, not just executing someone else's system
Comfortable leading a full service period without a manager standing behind you
Someone who trains and develops rather than just supervises
Current Victorian RSA
Rostering and wage cost exposure well regarded
Beverage GP hits target consistently — every month, not one good one
The bar runs the same way whether you're on or not, because the standard is trained in rather than supervised in
Stock is accurate, variances are explained, and nothing runs out on a Saturday
The floor team knows the product and can sell it — the whole room, not just the bar
The people coming up behind you are getting better, and one of them is ready to step up
The bar is genuinely yours to run, in a pub that backs its leaders and is growing. You'll have real autonomy over the beverage program, ongoing development through PAX Hospitality, and a clear path forward for the right person.
