Mexican cooking. Market energy. Your next step in the kitchen.
Pacho is an independent taqueria inside Prahran Market. We serve Mexican street food with care, from slow-cooked birria and carnitas to house-made salsas, breakfast tacos and changing specials.
We’re looking for an experienced chef who enjoys being on the tools, takes pride in an organised section and communicates clearly during a busy service.
This role could suit a strong Chef de Partie ready for more responsibility, or an experienced senior chef who enjoys working in a small team.
What you’ll get
Mainly daytime work and a regular weekly roster.
Practical training in Pacho’s recipes, preparation and service.
A close working relationship with our owner
Responsibility for your section and a voice in improving daily service.
The opportunity to contribute ideas for specials as you develop your understanding of Pacho’s food.
Your role
You’ll run a section from preparation through service and clean-down, while helping the team stay organised.
That includes:
Preparing and cooking consistently to our recipes.
Helping coordinate service and guiding less experienced team members.
Following prep plans, checking stock and communicating shortages early.
Maintaining food safety, clean workstations and organised storage.
Bringing practical ideas to improve quality and workflow.
What we’re looking for
You have proven experience in a busy professional kitchen and can run a section independently. You plan ahead, communicate calmly and follow through.
Mexican cooking experience is welcome. Strong kitchen fundamentals, a good palate and a willingness to learn our methods matter most.
We value people who care about the food and treat their colleagues with respect.
The roster
Full-time, working Tuesday, Thursday, Friday, Saturday and Sunday, 7:00 am–5:00 pm.
Regular days off are Monday and Wednesday. Occasional evening events are part of the role.
Superannuation is paid in addition to the advertised salary.
How to apply
Send your CV and a short note with your current or most recent venue, the section you ran and your earliest start date.
We’re interested in how you work and what you’re looking for next. No formal cover letter needed.
