Good Gnocchi Pasta Bar & Bistro is looking for an Experienced and Capable Head Chef/Manager to assist in the leadership and operations of our small but mighty kitchen team.

Good Gnocchi is a small Italian-ish bistro located near the borders of Carlton North, Fitzroy North and Brunswick East. We are seeking an experienced and passionate Head Chef / Kitchen Manager to run our kitchen operation and drive quality, consistency and productivity.

Good Gnocchi is more than just Gnocchi. We are a Modern, Italian-American/Australian Pasta Bar that serves quality Pasta, Gnocchi & Bistro style mains, with a nod to the memorable and nostalgic dishes we all love. 

The successful applicant will have experience running restaurants of a similar nature to ours, a love for producing quality, well excecuted food using traditional and modern techniques. Our new Head Chef will be very well organised, friendly, confident and inspiring, and posess excellent communication skills.

Reporting directly to the owner within a small management team, as Head Chef you will be part of this team and included in overall business conversation. Effectively, you will be responsible for the management of the kitchen team and its operation, and will maintain responsibilities including the following:

 

 

  • Maintaining the quality and consistency of all prepped and plated food
  • Assist in the implementation of recipes and dishes on the menu
  • Sourcing quality ingredients
  • Ensure a very high level of consistency of dishes including portion control, flavours and plating
  • Have a professional, mature and confident hospitality outlook
  • Managing the stock control of ingredients through proven systems and procedures
  • Proven produce and wage budgetary management proficiency
  • Recruitment, training and productivity of all kitchen staff 
  • Maintaining our Food Health and Safety Programme and responsibilities

 

 

 

We offer flexible working arrangements, straight shifts no doubles or splits, competitive salary/rates, and weekend work is optional provided the kitchen is equipped to run autonomously. 

Your success will be measured by a set of KPIs provided upon commencement including quality and delivery of food, management of food and labour cost targets and customer satisfaction. Full support will be provided by the owner to help achieve your goals.

 

• Competitive Salary 80k base salary - negotiable after probationary period
