The Grand Electric, Surry Hills' intimate theatre, features indoor and courtyard bars, serving cocktails, simple food and great wines. We're after a Bar manager who can own the whole show, delivering old-world glamour and craft behind every drink.

This is a senior, full-venue role — you'll have genuine ownership of both bars and food. We're looking for someone ready to step up and take charge of their own space.
What you'll be doing
- Running service across two bars — internal and courtyard — plus food, coordinating both spaces through two distinct nightly rushes: fast and high-throughput pre-show, slower and more conversational post-show
- Building and evolving a classic cocktail program with real technique behind it, executed at speed under pressure
- Overseeing food service alongside the bar operation, ensuring both run smoothly and in sync
- Leading and training a team across both bars and food to match the room's tone: warm, unhurried in manner even when the pace is fast, hospitable without ever stealing the spotlight
- Managing stock, supplier relationships, and costs across the full operation
- Working closely with theatre management to align service with the show schedule, while having autonomy to run day-to-day operations your way
You'll fit right in if you
- Have solid experience running a multi-area operation — ideally across more than one bar, or bar plus food
- Know how to manage a high-pressure rush without losing the room's atmosphere
- Have genuine knowledge of classic cocktails and spirits, and can execute a craft program at speed — this isn't a slow-pour bar
- Are ready to take real ownership of a space, with the confidence to run it your way while staying aligned with management
- Bring presence and hospitality instinct, not just operational skill
