About Noẽma & Wishbone:
Opening this November, Noẽma and Wishbone are the newest venues from acclaimed restaurateur Chris Lucas and Lucas Collective, located in the heart of Melbourne's CBD.
Noẽma is a contemporary Mediterranean restaurant with modern Greek influences, showcasing exceptional produce, bold flavours, and cooking over a Josper grill. Wishbone brings the vibrant flavours and energy of Hong Kong-inspired casual dining, with a focus on quality ingredients, genuine hospitality, and flavour-driven dishes.
Together, these exciting new venues offer unique dining experiences and an opportunity to be part of an opening team from day one.

About the Opportunity:
We're looking for exceptional Bar Managers to join the opening team for these exciting new venues. You'll play a key role in shaping the culture from day one, leading high-performing bar teams, driving exceptional beverage experiences, and creating unforgettable moments for both our guests and our people.

Location: Melbourne CBD.

What You'll Bring
  • Proven experience leading high-performing bar teams
  • Strong leadership and people management skills
  • Passion for delivering exceptional guest experiences
  • Thrives in fast-paced, high-pressure service environments
  • Extensive cocktail and beverage knowledge
  • Experience with stock control and inventory management
  • Ability to build a positive team culture and strong working relationships
  • Excellent organisational and time management skills
  • Proven ability to achieve and exceed GP targets
  • Sound understanding of labour management and Work Health & Safety (WHS) compliance
