Nestled within The Lands by Capella precinct in the heart of the CBD, Spezia is a 130-seat open-air Italian courtyard restaurant inspired by the rich traditions of Italian hospitality and the forgotten spice routes that once shaped its cuisine. Set within a beautifully restored sandstone courtyard, Spezia will offer an elevated all-day dining experience from morning espresso and leisurely lunches to aperitivo, dinner and late-night cocktails.

 

We're seeking passionate and experienced Chefs who are committed to exceptional Italian cuisine, thrives in a fast-paced luxury dining environment, and is excited by the opportunity to help shape one of Sydney's most anticipated restaurant openings. Working closely with the Group Executive Chef and Head Chef, you'll play a key role in leading the kitchen team, maintaining the highest culinary standards, and delivering an outstanding guest experience from day one.

Key Requirements

  • Previous experience as a Executive Sous Chef, Sous Chef or Senior/Chef de Partie in a premium restaurant, luxury hotel, members' club or fine dining venue, with Italian or Mediterranean cuisine experience highly regarded.
  • Experience supporting pre-opening restaurants or opening new venues, with the ability to establish kitchen operations, systems and service standards from the ground up.
  • Strong leadership skills with a proven ability to mentor, train and inspire kitchen teams, fostering a positive, collaborative and high-performance culture.
  • Passion for authentic Italian cuisine, seasonal produce and refined presentation, with a commitment to consistency, quality and exceptional attention to detail.
  • Solid understanding of kitchen operations, food preparation, ordering, inventory management, rostering, labour planning, food cost control and supplier relationships.
  • Thorough knowledge of food safety, HACCP and WHS requirements, ensuring compliance while maintaining the highest operational standards.
  • Ability to perform under pressure in a high-volume, luxury dining environment while remaining calm, organised and solutions-focused during service.
  • Strong communication and teamwork skills, working collaboratively with the Group Executive Chef and Head Chef, front-of-house team and wider leadership group to deliver a seamless and memorable guest experience.
  • Flexible availability, including evenings, weekends and public holidays, with a genuine passion for hospitality and continuous professional development.
