The Albion Hotel is excited to be working with a new experienced Sous Chef in the near future on assisting with service, prep and operations at our newly opened venue on Smith street in the heart of Collingwood. 

Our menu is modern bistro style, with our kitchen open for 5 lunch services and 7 dinner services. The right candidate will be strongly versed in the service, prep and operation of a busy inner Melbourne venue. The ideal candidate will be able to demonstrate an ability to:

  • Confidently handle a busy service. 
  • Efficiently and effectively manage a prep list.
  • Show up to work with a positive, professional and happy attitude.
  • Maintain a clean and professional work space.
  • Adhere to cleaning procedures.
  • Cook and present high quality food (ideally from a range of cuisines).
  • Operate within a culture of respect.
  • Effectively and professionally troubleshoot operational problems with the head chef. 
  • Contribute to the food offering within the context of the venue.
  • Order and receive stock, working with budgets and processing invoices.
  • Assist in keeping wages below target.
     

Who are we:

The Albion Hotel is a cosy old world style Aussie pub serving modern bistro comfort food, local craft beer (mainly Bodriggy), classic/natural wines and seasonal cocktails in the heart of Collingwood. Our food offering tips the hat at classic pub fare with a modern focus on quality, is approachable, comforting, classic and smart. This mirrors the experience/personality of the pub and should encourage regular visits.

Located on Smith street, close to the corner of Johnston street, we are right in the heart of the inner north of Melbourne. We our proud of our punters and are quickly becoming a local community favourite.

We are looking for a committed Sous chef who is passionate, reliable & motivated. We want Chefs who want to be part of a professional team, to play key roles within the kitchen and buy into our philosophy.
