About the role

We're on the lookout for a sharp, service-focused Assistant FOH Manager who’s ready to step up, lead from the floor, and bring energy to every shift. You'll work side-by-side with the FOH Manager to run smooth, high-quality services — and be trusted to take the reins when they’re not around. This is a hands-on role for someone who thrives in the action, knows how to keep standards high, and can keep their team motivated and focused under pressure.

Responsibilities

  • Lead floor operations with confidence, setting the pace and tone for service.
  • Support the FOH Manager with training, development, and succession planning for the team.
  • Act as a trusted point of contact for both staff and guests, handling feedback and resolving issues with professionalism.
  • Maintain sharp service standards, guest satisfaction, and a proactive sales culture that guides the guest journey.
  • Manage rosters, wage costs, and stock levels to keep service efficient and profitable.
  • Assist in beverage program development — from maintaining the wine list to liaising with suppliers and overseeing stock control.
  • Ensure compliance with RSA, licensing, food safety, allergen procedures, and OH&S requirements.
  • Oversee venue presentation, cleanliness, and equipment maintenance to uphold a premium environment.
  • Support HR processes, including onboarding, performance reviews, and (when required) disciplinary actions.
  • Take charge of the floor when the FOH Manager is away, ensuring smooth, high-quality service.

About you

  • Experience in premium dining (fine dining or upscale brasserie-style – no pubs or clubs)
  • You're hands-on, present, and lead by example — not from behind a desk
  • Confident managing rosters, stock, and costs to keep the venue profitable.
  • Knowledgeable in compliance areas — RSA, food safety, allergens, and OH&S — and committed to maintaining a safe, professional workplace.
  • Skilled at motivating, training, and developing teams, with the ability to hold people accountable while lifting morale.
  • A natural communicator who thrives in a fast-paced, guest-focused environment.
  • Commercially savvy, confident working to sales targets, and proactive about driving results.
  • Open to feedback and always looking for ways to improve — for yourself and your team.
  • Fully eligible to work in Australia (no sponsorship available).
