Bonny is an established, successful business of 5 years, located on vibrant Brunswick St in Fitzroy, amongst complementary businesses with high footpath traffic.
We are currently seeking a talented and driven kitchen operator or chef looking to start or expand their own business. This is an exciting opportunity to take over the kitchen operations at our well-established venue, where you can bring your culinary vision and jump straight into a turnkey kitchen setup with an existing loyal customer base and revenue.
We are ideally looking for a long-term partnership, where you can make your mark and further grow the kitchen business over several years. However, we are open to considering all types of arrangements, including shorter-term opportunities or pop-ups.
Our existing steak nights consistently do 60-120 covers on Wednesdays and 30-70 covers on Sundays. Additionally, we regularly host functions, which make up a significant portion of our current business.
The position offers flexibility in terms of rent, either through a set amount or a percentage of sales. You will keep all food revenue, providing you with the opportunity to build a thriving operation.
The previous kitchens have successfully operated with a lean team, typically 2 kitchen staff on quieter nights and 3-4 staff on busier nights. The venue currently generates an average of $12,000 per week in food sales, and we are eager to work with the new operator to further build on this success and increase revenue.
