Assistant Restaurant Manager – Saint Peter
Saint Peter is a three-hatted restaurant featured on The World’s 50 Best, located in Paddington, led by globally renowned Chef Josh Niland.
Originally opening in 2016 as an intimate counter-style restaurant on Oxford Street, Saint Peter has evolved over the past decade into a landmark dining destination, now housed within the historic Grand National Hotel.
Under the leadership of Chef Josh Niland, the restaurant has become known for its innovative and sustainable approach to cooking with seafood, redefining how fish is sourced, prepared, and experienced. We are seeking an experienced Assistant Restaurant Manager to join our leadership team.
This role is ideal for a hospitality professional who leads by example, thrives in a high-performance environment, and is committed to delivering exceptional guest experiences while supporting and developing a close-knit team.
Support the Restaurant Manager in the daily operations of the restaurant
Lead service with confidence, warmth, and attention to detail
Foster a guest-focused culture that reflects Saint Peter’s values
Assist with staff training, mentoring, and performance development
Maintain service standards across all areas of the dining room
Oversee reservations, floor plans, service flow and rostering accordingly
Ensure compliance with RSA and company policies
Contribute to a positive, professional, and collaborative team environment
Proven experience in a supervisory or assistant management role within fine-dining restaurants
Exceptional service standards and strong leadership skills
Highly organised, adaptable, and calm under pressure
Excellent communication and presentation
Strong wine and food knowledge, with confidence in wine pairing
Proactive mindset and strong work ethic
Able and willing to work weekends, public holidays, opening and closing shifts
Current NSW RSA Certificate
Proof of current Australian working rights
Fluent English language proficiency
Genuine passion for hospitality, teamwork, and continuous improvement
