The Role
We're looking for an experienced Sous Chef to support our Executive Chef and Head Chef, helping lead kitchen operations across prep, pack-down and event service.
You'll be confident running service, leading teams, and working with autonomy in fast-paced, event-driven environments.
Key Responsibilities
Lead kitchen teams across prep, events and pack-down
Execute live fire cooking across varied locations
Oversee preservation processes (fermenting, curing, smoking, pickling)
Manage ordering, suppliers and inventory
Conduct stocktakes and maintain food cost controls (Cooking the Books or similar)
Maintain food safety systems and compliance
Mentor and support junior chefs
About You
Proven experience as a Sous Chef or in a senior kitchen leadership role
Strong leadership skills -- able to manage, mentor and motivate a team
Highly organised with excellent attention to detail and time management
Confident working independently with strong ownership and initiative
Experience with ordering, supplier management and stock control
Solid understanding of food costing and margin control
Current Food Safety certification
Valid driver's licence and willingness to travel to offsite events
Strong understanding of live fire cooking and large-scale event execution
Experience with preservation techniques (curing, fermenting, smoking, pickling)
Physically capable of event-based work (pack-ins, varied locations)
