The Role
We are looking for a disciplined and versatile Sous Chef to join our leadership team. Reporting to the Head Chef, you will be second-in-command, responsible for maintaining excellence across both our daily café service and our busy events calendar. Your primary goal is to seamlessly manage daily kitchen operations and event execution in the Head Chef’s absence, ensuring our commitment to seasonal quality remains consistent at every scale.
Key Responsibilities
- Lead the kitchen team through high-volume café service and bespoke wedding events.
- Manage the prep and execution of event menus, ensuring precision and timing for large groups.
- Oversee quality control, working closely with local suppliers to showcase farm produce.
- Manage stock control, ordering, and wastage with a focus on sustainability.
- Assist in training junior chefs and apprentices in both service and banquet techniques.
Skills & Experience
- Proven experience as a Sous Chef or Senior CDP, ideally with a background in weddings or large-scale events.
- A genuine passion for seasonal produce and working with local suppliers.
- The ability to switch gears between fast-paced café service and the fine details of an event.
- Strong leadership skills and a calm, professional demeanour during high-pressure services.
- Certificate III or IV in Commercial Cookery.
