The Back Bar Group operates The Lion & Wombat in St Kilda which is a British-inspired pub most known for its Sunday Roasts and classic British cuisine.   

The Flying Fox Public House is a British and European-influenced pub featuring a front bar and bistro dining room serving 110 guests. Led by an Executive Chef with a hatted-bistro background, our kitchens focus on:

The Role

As Chef de Partie, you will:

• Run your own section during prep and service
• Deliver consistent, high-quality dishes
• Work closely with senior chefs to establish opening kitchen standards
• Support junior chefs and maintain strong team culture
• Contribute to menu development and seasonal changes

Flexible roster including nights and weekends.

What We’re Looking For

Minimum 2 years CDP or strong Demi Chef experience

Restaurant, bistro, or food-led pub background

Strong organisation and service skills

Calm under pressure with attention to detail

Passion for European and British-inspired cuisine

Team-focused attitude and positive energy
