Bistra is an Australian bistro serving quality food and wine; our fare draws its influence predominantly from British, French and Italian cooking and technique, and yet it is quintessentially Australian. In our intimate, two-storey space, you can expect generous, memorable plates championing seasonal ingredients and an extensive list of wines which we know you’ll want to drink.
About the opportunity: Bistra is searching for a full-time sous chef to join our growing kitchen team. The role presents an opportunity to work in a newly built kitchen, alongside like-minded and ambitious chefs. Reporting to the head chef, Alex Nishizawa, this role requires a committed and passionate approach, with an ability to maintain exceptionally high standards. Rosters will offer a mix of both lunch and dinner services. Full-time positions are offered at 40 hours/week across four days.
As the sous chef at Bistra, you will be responsible for:
Working closely with the head chef to ensure a high level of consistency and execution across preparation and service.
Running service in the absence of the head chef.
Preparing meat, fish and poultry.
Overseeing food hygiene standards.
Monitoring stock on hand, portioning, and waste management.
Overseeing the management of kitchen food safety standards and records.
Resourcefully solving any issues that arise and seize control of any problematic situations.
Managing and training kitchen staff, and assessing staff performance.
An ideal candidate will have:
Two-three years full-time experience in an equivalent position.
The knowledge and ability to run the kitchen in the absence of the head chef.
A love of food and high quality ingredients.
A high level of attention to detail.
Adaptability to change and willingness to embrace new ideas and systems.
Strong verbal and written communication skills.
Personal traits of kindness and empathy.
Ambition to grow within the role.
A valid Food Safety Supervisors Certificate.
