You will launch and lead a state-of-the-art, 6-seat omakase counter within DISUKO, the MAMAS Dining Group’s most anticipated Japanese rooftop opening. This is your chance to build a world-class reputation in Melbourne—this is your counter, your style, your legacy.

 

The Stage: Craft & Control

 

This role is focused on the art of nigiri, divorced from the pressures of high-volume kitchen operations.

  • Shari Program: Design, manage, and execute the full shari (sushi rice) program to your exacting standards.

  • The Experience: Lead all counter service, setting the precise rhythm, etiquette, and atmosphere for the intimate 6-seat guest journey.

  • Leadership: Mentor and train a dedicated junior chef to your standards.

  • Strategic Input: Work directly with Directorsto guide the counter's reputation and profitability.

  • Experience: 4+ years in quality Japanese kitchens, with proven high-level experience in sushi preparation and service.

  • Presence: A calm, stable, and guest-focused presence suitable for a premium, open-counter service.
