Velluto is opening in Beaumaris in late 2026 – offering a wood-fire focussed menu, refined,architecturally designed dining room and a considered beverage program.  

We are seeking a talented Venue Manager to build a team for longevity.

The Brief

Based around the principles of ‘Refinement’, ‘Down to earth connection’ and ‘Bayside at heart’ Velluto is a venue that will engage with its location and reflect deep consideration for produce, service and guest experience.

Velluto’s kitchen is shaped by fire – the grill will be central to our identity.

The Role

Velluto’s Venue Manager will have the opportunity to build the opening team, the service identity and the beverage program.

Nestled in a vibrant Beaumaris Velluto offers a great opportunity for strong local connection and lifestyle. This role will suit a dynamic leader who loves guests, appreciates design and has an eye for the detail that brings confidence to refined neighbourhood dining.

Initial responsibilities:

- Recruit and develop the front of house team – including waiters, hosts and beverage professionals

- Develop a strong sequence of service and daily operational and HR structures

- Assist to advise and implement reservation, stocktake and point of sales systems

- Assist to develop the opening P&L in conjunction with the Owner and Head Chef

Ongoing

- Oversee the delivery of refined, contemporary service

- Build a culture based on pride and guest first behaviour

- Drive team performance in a hands-on manner

- Develop and maintain standards throughout the business

- Provide weekly financial reporting and lead strategic change based on these metricsincluding but not limited to – Guest Satisfaction, visitation, spend per head targets and industry standards for team training and retention

- Manage stock control and support the development of a unique and relevant beverage program

ABOUT YOU:

• Have a commitment to delivering unforgettable and sincere dining experiences

• Have proven financial and commercial capability including P&L management

• Are highly organised and ambitious

• Experience recruiting and developing strong and engaged teams

• Are career-focused and have a desire to learn and challenge the norm

• Value excellent, intuitive and personalized customer service and possess strong communication skills  

• Possess a high level of experience in elevated dining and beverage service, with a minimum WSET 3 + Diploma of Hospitality or equivalent

• You have finesse and maturity and demonstrated experience as a manager in a premium dining environment
