About DISUKO
DISUKO is Melbourne’s newest rooftop restaurant and bar, inspired by Tokyo’s omakase culture and nightlife. From MAMAS Dining Group (Hochi Mama, Suzie Q, Windsor Wine Room), DISUKO blends precise sushi, yakitori theatre, and vinyl-fuelled evenings. With a completely new fit-out and a 6-seat counter, this is a chance to shape something from day one. The Role — Senior Sushi Chef
We’re looking for an Itamae to lead the sushi program and own the 6-seat omakase counter. As part of the opening team, you’ll:
- Deliver nigiri and omakase counter service to guests
- Calibrate sushi rice and manage fish ageing & yields
- Oversee and manage the fish program for the venue
- Uphold HACCP-level food safety and cold-section SOPs
- Mentor and train a junior sushi chef beside you
- Collaborate with Head Chef & Directors to create a memorable dining experience
What You’ll Bring
- 4–5+ years in Japanese kitchens (sushi/omakase essential)
- Strong understanding of japanese techyniques & fundamentals
- Calm leadership style and confidence at the counter
- Discipline for consistency, cleanliness, and systems
- A passion for food & craft
