About Us: Manze is a small award winning restaurant in North Melbourne. Over the last two years, we have become known for our Mauritian flavours, natural wine list, vibrant atmosphere, and warm, welcoming service. With only 30 seats, we are able to consistently offer a high commitment to our cooking and standards - we source most of our produce from small organic farms in Victoria, and sustainable meat and seafood too. Our small team is made up of passionate professionals who take pride in everything they do, and offer one of the best dining experiences in Victoria.
Your responsibilities will include: - Taking care of a kitchen section - prep, ordering and maintaining standards - Managing par levels during prep - Following and executing our recipes in line with your training - Maintaining high standards throughout your day - both your own and supporting your team to do so - Eventually, training new kitchen staff and overseeing apprentices working in your section - Maintaining exceptional standards in regards to hygiene, organisation and stock rotation.
Your Skills, Experience and Interests: - Certificate IV in Commercial Cookery - Diploma of Hospitality Management - Minimum of three years of relevant work experience in a hatted venue - Excellent interpersonal and communication skills, and a reasonable grasp of the English language - Demonstrated understanding of OH&S and food safety requirements - Food Supervisor qualifications encouraged - Highly desired skills and experience - demonstrated ability to maintain a fermentation program, including producing lacto ferments, vinegars, and misos. - Interest in, and understanding of seasoning with spice, acid, and heat (chilli etc). - A demonstrated interest in diverse cuisines, especially South Asian and South East Asian cuisines.
