We are seeking an experienced and highly skilled Head Chef to join Di Stasio Carlton, one of Melbourne’s most respected Italian dining destinations. This role requires a leader who can uphold the restaurant’s exceptional standards, bring creativity to menu development, and maintain strong operational control.
Key Responsibilities:
Oversee daily kitchen operations, ensuring consistency, quality, and presentation in every dish
Work closely with the Executive Chef to develop and execute seasonal specials, menu updates, and new dishes
Implement and monitor cost control measures, including food, labor, and waste management
Lead, train, and mentor the kitchen team to deliver peak performance and maintain a positive, professional environment
Ensure compliance with all food safety, hygiene, and OH&S requirements
Requirements:
Proven experience as a Head Chef or Senior Sous Chef in a high-volume, high-standard kitchen
Strong knowledge of Italian cuisine and premium produce
Excellent leadership, communication, and organisational skills
Ability to work collaboratively within a team and adapt to evolving service demands
